Tomato pie for dinner!

One yummy treat I love to make in the summer is tomato pie! It is nice to get REALLY good farmers market tomatoes of different types and colors for this dish. Here's what you do:

Step 1: Score the bottom of the tomato with an X and dip in boiling water for a minute. Take the tomato out of the water and peel off the skin. [Also, don't forget to turn on the oven to 350F...]




Step 2: Chop and seed the tomatoes, add some salt, and let them drain. While they are draining gather your other ingredients: Cheese, mayonnaise, pepper, basil, and a pie crust. [Note: Don't forget to defrost your crust if it is frozen...] Mix together the mayo and cheese. I like to use half mayo and half plain greek yogurt to make it a tad less guilty but still taste yummy.

Step 3: Assemble! Crust in the bottom which you can bake for few minutes first. [Note: If you forgot, now is the perfect time to turn on the oven...] Then add tomatoes with salt, pepper, and some chopped basil.
Step 4: Spread the cheese/mayo/yogurt mix on top and bake! Then remove from oven and cool.
Step 4: Slice and enjoy!
Hopefully you are eating before 9:30pm, which is what happened to me after I forgot to defrost the crust and turn on the oven... Oops! So, I had a small piece and have been enjoying the rest all week! One more thing, apparently Trader Joe's pie crust is meant for sweets because it has sugar and doesn't quite match a tomato pie. I LOVE all things TJ's but this was a little disappointing when I discovered it at 9:30. Oh well, maybe next time I will try making my own crust... Or there's always Pillsbury. :)

Something about this ad...

So I love Hulu. It is  has enabled me to not have cable TV and the queue allows me to watch what I want whenever. And there are some very annoying ads on Hulu but this ad from Levi's catches me every time.

So, the ad is an ad and makes you want to go out and live life with the beautiful people and buy some jeans - which I know is false (or if not then I REALLY need those jeans!)

But the words are what get me. And some of it I know is false but I like this idea of going after the light and beating the darkness. And that the more light you have in your life the more you will have. Sometimes my life feels so stagnant and I am unsure of how to change it. Or afraid to try. Because it feels overwhelming to make changes. And this feels like a sterotype but more and more I feel desperate for something more.
